Easy Apple Pie
This EASY APPLE PIE can be whipped up in minutes then put to bake for half an hour. We use frozen puff pastry as the pie base.

Ingredients
500g frozen puff pastry, thawed at room temp till soft
4 large granny smith apples, peeled and diced (2 of them); peeled and sliced thinly the other 2
1/4 cup granulated sugar
2 tbsps packed light brown sugar
1 tsp lemon juice
1/2 tsp vanilla extract
1/2 tsp cinnamon powder
Pinch of salt
1 tbsp corn starch
2 tbsps butter
1 egg for egg wash
Method
01 In a medium saucepan over medium heat, melt butter. Add cubed apples, sugar, brown sugar, lemon juice, vanilla, cinnamon and salt.
02 Cook, stirring occasionally, until apples are soft.(about 10mins)
03 Add cornstarch and stir. Cook until thickened. Set aside and let cool.
04 Preheat oven to 350 F/180 C. Lightly butter and flour your baking dish.
05 On a lightly floured surface, roll the puff pastry to quarter inch (6mm) thickness.
06 Transfer rolled puff pastry to the baking dish. Put the cooled apple mixture into the baking dish. Top the pie surface with the thinly sliced apples and any remaining puff pastry (make decorative shapes).
07 Brush with egg wash and sprinkle with sugar.
08 Bake for 30 - 40mins (until crust is golden).
09 Remove from oven, let cool. Slice and serve with ice cream.
