Stewed Pork Ribs in Sticky Spicy Sauce

This Stewed Pork Ribs in Sticky Spicy Sauce is easy to prepare but is very flavorful and goes well with steamed rice. You can also use this recipe for chicken, lamb or beef.

Ingredients

  • 1.8 kg ribs or meat of your choice, chopped into bite-sized pieces
    Marinate with ~

  • 3 tbsps light soy sauce

  • 5 tbsps of Thai chilli sauce

  • 1 tsp white pepper powder

  • 2 tbsps ginger juice (grate 30g of old ginger and squeeze out the juice)

  • 5 tbsps cornstarch
    For the sticky sauce~

  • 3 tbsps hoisin sauce/Chinese BBQ sauce

  • 2 tbsps honey/maltose

  • 1 heaped tbsp cornstarch
    For garnish ~

  • A few sprigs of fresh mint/coriander, finely chopped

Method

01 In a large bowl, place all the cleaned meat pieces. Add all the marinade ingredients. Mix well, cover with cling film and set aside for at least 1 hour.

02 When ready for cooking, pour all the marinated meat into a casserole or pot. Cook on medium low heat for 45mins, stirring every 10mins.

Cook covered and stir every 8 to 10 mins to prevent burning.

03 After 45 mins, turn off heat.

04 Preheat oven to 200C. Transfer only the meat pieces to a baking tray.

Keep the gravy for the sauce.

05 Cook for 15mins, turning once for even browning. Once browned, remove and place on your serving platter, lined with your favorite greens. (chopped lettuce/cabbage etc)

06 To cook the sauce, pour all the gravy into a saucepan. Bring to the boil. Mix the hoisin sauce, honey and cornstarch together. Add a 1 or 2 tbsps water if necessary. Add the mixture to the boiling gravy.

Stir continuously and bring to the boil again. Cook until the sauce thickens to your preferred consistency.

07 Drizzle the cooked sauce over the meat on your serving platter. Garnish with the chopped mint. Serve with hot steamed rice.
