Baked Chicken Thighs

Ingredients

  • 2 chicken thighs

  • 3 tbsp light soy sauce

  • 1 tbsp dark soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp sugar

  • 1 tsp pepper powder

  • 2 tsp dried/fresh rosemary

  • 1 tsp dried/fresh thyme

  • 2 tsp mirin/cooking wine (optional)

  • 1 tsp chilli powder

  • 2 tsp cornstarch

  • 1 tbsp corn oil/melted butter


Method

01 n a medium bowl, marinate the chicken thighs with all the ingredients. Cover and place in the refrigerator.

02 When ready to cook, preheat oven to 190C. Place chicken thighs on a lined baking tray. Drizzle 1 tbsp of the marinade sauce over the top of each chicken thigh.

03 Bake for 40mins. [After 20mins, flip over and drizzle 1 tbsp of marinade sauce over each thigh. Continue baking until cooked, about 20 mins more.]

04 Remove and serve.


Notes

Marinate the night before then pop them into the oven the next morning for a quick meal.
