Our JAM RECIPE of the day, Apple Cobbler, is a delicious dessert you can eat with ice-cream and caramel sauce. Try it if you feel like having an apple dessert.

Ingredients

  • 8 apples (about 1.8 kg/4 lb), peeled, cored and sliced (try a mix of Granny Smith and Gala)

  • 2 tbsp apple jam or any sourish jam ( I used kiwi jam)

  • 1 tsp vanilla extract

  • 106 g (1/3 cup + 3 tbsp) granulated sugar, plus more for sprinkling

  • 113 g (8 tbsp) cold unsalted butter, cubed

  • pinch of salt or to taste

  • 180 g (1 1/2 cup) plain flour

  • 1 tbsp baking powder

  • 120 ml (1/2 cup) milk

  • Vanilla ice cream and caramel sauce, for serving (optional)

  • Mint leaves for garnish (optional)

Method

01 Preheat oven to 200 C/ 390 F.

02 Put the apples, vanilla, 70 g (1/3 cup) of the sugar, 2 tbsp of the butter and a pinch of salt in a large bowl and toss to combine. Transfer to a greased 25 cm/10-inch round baking dish. Set aside.

03 Combine the flour, baking powder, the remaining 36 g (3 tbsp) sugar, and a pinch of salt in a food processor and pulse to combine. Add the remaining 85 g(6 tbsp) butter and pulse until the butter pieces the size of peas. Add the milk and pulse until the dough just starts to come together in a ball.

(If you don’t have a food processor, cut the butter with a knife into the flour mixture until it resembles breadcrumbs then add the milk and mix until just combined.)

04 Drop rounded tablespoons of the dough all over the apples. Sprinkle the top generously with sugar.

05 Transfer the baking dish to the preheated oven at 200 C/390 F and cook on bottom heat, rotating the baking dish halfway through, until the apples on the sides of the pan are bubbling and golden brown, 15 to 20 minutes.

06 Adjust heat to top and bottom. Cook until the dough is cooked through and golden on top, about 15 minutes more.

07 Remove the baking dish from the oven and allow to cool for 10 mins. Serve with cold ice-cream and drizzle some caramel sauce over the top. Garnish with mint leaves.
