Today's RECIPE is Udang Masak Lemak Cili/Prawns in Spicy Coconut Gravy. It’s a popular dish in the Peranakan household.

Ingredients

  • 300 g prawns; shelled, deveined and marinated in 1 tsp sugar

  • 250 g sweet potato leaves

  • 200 g orange sweet potato/pumpkin; peeled, cubed and steamed for 20mins

  • 1 tsp salt or to taste

  • 200 ml coconut milk/santan

  • 400 ml water

  • 2 tbsp cooking oil

  • For the spice paste, blend or pound~

  • 10 shallots

  • 2 cloves garlic

  • 2 cm piece of turmeric

  • 1 cm piece of shrimp paste/belacan (toasted)

  • 40 g dried shrimps, soaked for 15 mins and drained well

  • 4 candle nuts/buah keras

  • 8 red chillies

  • 4 bird’s eye chilli (optional)


Method

01 In a wok/pan, heat up the cooking oil and saute the spice paste until fragrant and oil is separated, about 8 mins. Add in the sweet potato leaves and stir fry until well-mixed with the spice paste.

02 Add in all the water and half of the coconut milk, salt and sweet potato/pumpkin cubes. Simmer on medium heat until tender, about 8 mins.

03 Add in the prawns and simmer until just cooked, about 4 mins.

Add in the remaining half cup of coconut milk, bring to the boil then turn off heat. Taste and adjust seasoning accordingly.

04 Turn off heat. Dish up and serve with rice.


Notes

You can also use spinach or long beans or sweet leaf (cangkuk manis) for this recipe.
