Teriyaki Chicken Don
Keep calm and let's cook! Today's RECIPE is simple and appetizing especially if you adore sambal. This Bendi Sumbat Sambal Kelapa/Okra stuffed with Spicy Coconut Sambal is simply delightful.

Ingredients
2 boneless chicken thigh fillets with skin on (about 350g)
Ingredients for Teriyaki Sauce~
3 tbsp light soy sauce
3 tbsp cooking sake
3 tbsp mirin
2 tbsp sugar
To Serve~
3 big yellow onions, sliced
2 cups cooked rice
1 sprig spring onions (optional)
1 tsp white sesame seeds, toasted
Method
01 Combine the Teriyaki Sauce ingredients in a small bowl or cup and mix well until the sugar dissolves. Set aside.
02 Make sure your boneless chicken meat is even in thickness. Butterfly the thicker part if necessary (cut horizontally skin side down).
Poke the skin of the chicken fillet with the tip of the knife in several places so that the sauce will get through to the flesh better.
03 Heat a non-stick frying pan over medium heat. Place the chicken in the pan, skin side down. Cook for 3-4 minutes until the skin gets cooked to a golden brown.
Turn the chicken over and cook for about 3=4 minutes. If a lot of oil comes out of the chicken fat and skin, soak up the excess oil with paper towels.
04 Using the same frying pan with the chicken inside, add half of the Teriyaki Sauce.
Shake the pan to even out the sauce, and put the lid on. Cook for 30 seconds.
Remove the lid and cook until the sauce thickens and reduces to about 2 tablespoons, about 3-4 mins. Turn the chicken over and coat the skin side with the sauce.
05 Remove the pan from the heat and place the chicken on the cutting board, skin side up. Set aside the remaining sauce from the frying pan to drizzle over the rice.
Cover the chicken with foil for few minutes to let it cook further. Slice the chicken into 2 cm thick pieces.
06 In a clean frying pan, heat 1 tbsp cooking oil over medium heat. When oil is heated, add the sliced onions. Saute till onions soften, about 3 mins.
Pour the remaining half of the Teriyaki Sauce over the onions and simmer for 2 mins. Turn off heat. Dish out and set aside.
07 To serve your Chicken Teriyaki Don~
Dish some cooked rice into a big bowl. Add the sliced Chicken Teriyaki, some cooked sliced onions and pour about 1 or 2 tbsp of sauce (from either the Teriyaki Chicken or the cooked onions).
Sprinkle some toasted sesame seeds and sliced spring onions. Serve immediately.
Notes
You can get Japanese soy sauce, cooking sake and mirin(sweet rice wine) from Japanese mart or some supermarkets. They are also available online.
You can also serve Chicken Teriyaki on its own without the rice.
You can use chicken breasts for this dish but it won't be as juicy.
