This dish is simple yet delicious. Stuffed Tofu Puffs with Egg Sauce goes well with hot steamed rice or noodles.

Ingredients

  • 12 tofu puffs/tau pok

  • 400 g (14 oz) minced meat (pork/chicken/lamb/beef)

  • 2 eggs, lightly beaten

    Marinate minced meat with~

  • 2 tbsp light soy sauce

  • 1/2 tsp white pepper powder

  • 1 tbsp worchestershire sauce (optional)

  • 1 tsp sugar

  • 1 tsp sesame oil

  • 1 tbsp cornstarch

    Seasoning for the sauce, combine the following~

  • 2 tbsp light soy sauce

  • 1 tbsp sugar

  • 1 tsp sesame oil

  • 1 tsp salt or to taste

  • 1 tsp chicken stock granules

    Thickener~

  • 2 tbsp cornstarch/tapioca starch

  • 4 tbsp water

    Garnish (optional)~

  • 2 sprigs spring onions, chopped

  • 1 red chilli, chopped


Method

01 Marinate the minced meat with the ingredients listed. Set aside for at least 1 hour.

02 Slice each piece of tofu puff diagonally. Using a pair of kitchen scissors, cut an X on the white part. (Remove some of the white part for ease of stuffing). When ready, spoon half a tablespoon of the marinated minced meat into each half of the tofu puff. Press to adhere and smooth the surface. Repeat until all the tofu puffs are stuffed.

03 Place the stuffed tofu puffs in a heat-resistant plate/dish. Steam on medium high heat for 20 mins. Set aside.

04 To cook the egg sauce, heat up 2 cups of water in a wok/saucepan. Add the combined seasoning and bring to the boil. Add the thickener (cornstarch + water) and stir well.

Add in the steamed stuffed tofu puffs. Stir to coat the tofu puffs with the sauce. Bring to the boil and cook for 2 mins.

Turn off heat. Gradually stir in the beaten eggs. Keep stirring for 1 to 2 mins.

05 Dish out and garnish with chopped spring onions and chillies.

Serve immediately


Notes

You can also combine the meat (pork + chicken) or (pork + beef) for a variety of flavors.
