Stir-fried Mince Meat with Potatoes

Good morning all! Have a safe and pleasant day. Today's RECIPE is comfort food and a favorite of my children when they were little.

Servings : 2 - 4


Ingredients

  • 3 cloves garlic, peeled and minced

  • 1 yellow onion, peeled and sliced thinly

  • 150g minced meat (chicken/pork/lamb/beef)

  • 3 medium-sized potatoes, peeled and sliced into 2mm thickness

  • 1 tbsp sugar or to taste

  • 1 tsp light soy sauce or to taste

  • 1 tbsp dark soy sauce

  • 1 tbsp taucheo/fermented bean paste/taucu manis

  • 1/2 cup water

  • cooking oil for pan frying

  • 1 sprig spring onion(for garnish)
    Marinate mince meat with~

  • 1 tbsp light soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp cooking wine(optional)

  • 1/2 tsp white pepper powder


Method

01 Marinate minced meat with the marinade ingredients. Set aside for at least 10mins.

02 Heat enough cooking oil for pan frying. When oil is hot, pan fry the potato slices until the edges are slightly browned. Remove and drain. Set aside.

Remove oil until about 2 tbsp is left in the wok/pan.

03 Heat the remaining cooking oil in the wok/pan. Saute minced garlic until browned. Add in the sliced onions. Saute until slightly browned.

04 Add the marinated minced meat and saute for 5mins. Add the fermented bean paste and stir till well combined. Add water and bring to the boil.

05 Add in the pan-fried potatoes. Stir to mix well. Reduce heat to medium and simmer for 10mins.

06 Add in the dark soy sauce, stir well. Taste then add sugar and light soy sauce to taste.

07 Cook for 2 more mins then dish out to serve. Garnish with spring onions if using.


Notes

You may add a cornstarch slurry (1tsp cornstarch + 1tbsp water) to thicken the sauce if desired.
