Pork Ribs with Jam Sauce
Today's JAM RECIPE is Pork Ribs with Jam Sauce. It's delicious....try it. You can substitute with chicken drumsticks or beef ribs if preferred.

Ingredients
1 kg (2.2 lb) pork ribs/beef ribs/chicken drumsticks; chopped into bite-sized pieces
For the marinade~
2 tbsp light soy sauce
2 tbsp ginger juice (pound/blend 5 cm (2 inch) piece of ginger and squeeze out juice)
1 tsp white pepper powder
1 tsp turmeric powder
2 tbsp rice vinegar
For the coating~
300 g (2 cup) fried chicken coating flour/KFC flour
2 eggs, lightly beaten
For the sauce~
2 cloves garlic, minced
2 tbsp jam or to taste (we used ginger lemon jam)*
1/2 cup water
pinch of salt
2 tbsp corn starch + 2 tbsp water(thickener)
Method
01 In a bowl, place the cut meat and all the ingredients for the marinade together. Mix well and cover with cling film. Set aside for 30 mins or longer.
02 When ready, place the marinated meat together with all the marinade into a pot. Add 2 cups water. Cook uncovered on medium heat for 30 mins, stirring occasionally. After 30 mins, remove from heat and drain the pork ribs. Let cool 10 mins.
03 Heat enough oil for deep frying in a wok/pot.
Place fried chicken coating flour in a bowl and beaten egg in another bowl. Dip the pork ribs in the egg first then roll into the fried chicken coating flour. Tap to remove excess flour.
04 When oil is hot, turn down to medium. Carefully, place the coated pork ribs into the oil for deep frying. Fry until golden brown. Remove and drain on a wire rack/paper towels.
05 To prepare the sauce:
Place all the ingredients(except thickener) for the sauce in a bowl and mix well. Heat 2 tbsp oil in a wok/pan. Saute the garlic until fragrant, about 2 mins. Add the sauce ingredients that you mixed in the bowl. Bring to the boil while stirring.
Reduce heat and add the thickener. Keep stirring until sauce becomes gooey and sticky.
06 Add the deep fried pork ribs and stir to mix well until all the pieces are coated with the sauce. Dish up and serve.
Garnish with mint if desired.
Notes
If you prefer to have more sauce, increase water to 1 cup or 1.5 cups when cooking the sauce.
Any type of sweet fruit jam can be used in this recipe.
