Bendi Sumbat Sambal Kelapa/Okra stuffed with Spicy Coconut Sambal

Keep calm and let's cook! Today's RECIPE is simple and appetizing especially if you adore sambal. This Bendi Sumbat Sambal Kelapa/Okra stuffed with Spicy Coconut Sambal is simply delightful.

Ingredients

  • 200g fresh grated coconut flesh/desiccated coconut

  • 300g dried shrimps, soaked in cold water for 10 minutes, drained and pounded

  • 4 tbsp cooking oil

  • salt and sugar to taste

  • kalamansi lime juice(optional)

  • 1 stalk wild ginger flower/bunga kantan, finely chopped(pink part)

  • 16 nos. okra/bendi
    Chilli paste(to blend/pound)~

  • 20 pieces dried chilies, soaked in boiling water and drained

  • 6 fresh red chilies, chopped

  • 200g shallots, peeled and coarsely chopped

  • 2 stalks lemongrass, sliced (white part only)

  • 3 cloves garlic, peeled and chopped

  • 8g fresh turmeric, peeled

  • 3cm piece of ginger, peeled and chopped

  • 5 candlenuts/buah keras

  • 1 tsp coriander powder/serbuk ketumbar

  • 2tsp roasted shrimp paste/belacan

Method

01 Blend/pound the spice paste and cook on moderate heat with the oil. Stir frequently until fragrant and the oil has separated, about 10mins. Dish up and set aside to cool.

02 In a wok/pan, dry fry the pounded shrimps over medium heat. Keep stirring for about 15 minutes, or until the shrimps are dry. Add the chilli paste, and continue to stir and cook for about 10 minutes until the shrimp floss is dry but still moist, and season with salt and sugar to taste. 

03 Add the grated coconut and stir fry for another 5mins. Add the juice of 2 kalamansi limes if preferred. Dish up, ready for use.

04 Blanch the okra in boiling water for 1min. Turn off heat. Remove and drain well. Make a long slit on the side of the okra. Stuff each okra with 1 tsp of the spicy coconut sambal.

04 Place on your serving plate. Top with some finely chopped wild ginger flower/bunga kantan. Eat as is as an appetizer or serve as a side dish with rice.


Notes

You may replace okra with chillies or brinjal. Tastes just as great.
