Har Cheong Gai/Deep-fried Shrimp Sauce Chicken Wings

Today's RECIPE is Har Cheong Gai/Deep-fried Shrimp Sauce Chicken Wings. It's a popular Singaporean dish. Be sure to marinate your chicken overnight for maximum flavor. Recipe adapted from: Straits Times Singapore.

Ingredients

  • 1kg of chicken mid-joint wings/whole wings

  • 3 garlic cloves, finely minced

  • 2 tbsp of ginger juice (pound or blend 4 cm piece of ginger)

  • 3 tbsp Chinese cooking wine

  • 2 tbsp shrimp sauce or har cheong (refer to My Pantry section for the photo)

  • 2 tsp sesame oil

  • ½ tsp ground white pepper

  • 4 tbsp potato starch

  • 1 tbsp cornflour

  • 2 tbsp water

  • enough cooking oil for deep-frying

Method

01 In a large bowl, place the chicken wings and add garlic, ginger juice, cooking wine, shrimp sauce, sesame oil, pepper, potato starch, cornflour and water.

02 Mix well and set aside to marinate in the refrigerator for at least 4 hours or overnight.

Remove from the refrigerator 30 mins before frying.

03 When done marinating, heat cooking oil in a wok/pot.

When oil is hot, turn down to medium heat.

04 Place chicken wings in and deep fry until golden brown.

Drain on paper towels and serve hot.


Notes

If you do not take alcohol, replace cooking wine with same amount of ginger juice.
