Coffee Braised Meat
Here is a versatile RECIPE for braising meat. It's aromatic and delicious. This Coffee Braised Meat goes well with rice or bread.

Ingredients
1.2 kg (2.6 lb) pork ribs/belly/chicken/duck (I used soft bone ribs)
For the Braising Liquid~
1 l (about 4 cup) water
160 ml (2/3 cup) light soy sauce
80 ml (1/3 cup) oyster sauce
2 tbsp fish sauce
1 onion, peeled and quartered
4 cm (1.5 inch) piece of ginger, peeled and smashed
5 garlic cloves, smashed
4 cloves
2 star anise
2 cinnamon stick
3 bay leaves
5 pieces dried chillies, rinsed and cut into halves
160 g (2/3 cup) granulated sugar or to taste
2 tsp instant coffee powder
Method
01 Boil a pot of water. Chop pork ribs into bite-size pieces. Blanch the meat to rid the smell. Set aside.
02 In a deep pot/wok, place all the ingredients of the braising liquid. Stir and bring to the boil. Reduce heat to medium then add the meat.
Simmer(uncovered) over medium heat for 1 and a half or 2 hours, until meat is tender but does not fall apart and the braising liquid is thickened.
03 Stir every 10/15 mins to prevent burning. Top up with water if necessary.
Dish up and serve hot with plain rice or noodles and your favorite blanched vegetables.

Notes
If using pork belly, braise the whole piece then slice into smaller pieces after braising. Drench the braising sauce over before serving.
If using chicken/duck, braise the whole chicken/duck and chop into smaller pieces after braising. Drench with braising sauce before serving.
Adjust braising time according to meat used, chicken will need shorter braising time compared to duck or pork. Braise until tender or as preferred.
