Cook Time | 45 mins

Servings : 1 loaf (8x4x4 inch/20x10x10cm)

Ingredients

  • 340 g (2 and 3/4 cup) bread flour/high protein flour

  • 25 g (2 tbsp) granulated sugar

  • 6 g (1 tsp) salt

  • 3 g (1.5 tsp) instant dried yeast

  • 210 g (1 cup) bluepea flower extract (steep 60 flowers in 250g/1.25 cup hot water, strain and allow to cool)

  • 20 g (5 tsp) shortening/margarine/butter, softened

Method

01 In a large bowl, place all the ingredients in and mix well with a spatula until you get a sticky dough.

Next, knead the dough by hand till you get a smooth and elastic dough, about 10-15 mins.

You can use a bread maker or a mixer with dough hook attachment for the above step.

02 Make a round ball with the dough and place in a lightly greased bowl. Cover with cling film and allow to proof until double in size.

03 Flour your work surface and a rolling pin. Take the dough out and shape into a rectangle.

Fold the edges in to meet in the middle then flatten with your floured rolling pin.

04 Roll the flattened dough into a log shape and press to seal the edges.

Place into a 20x10x10cm/8"x4"x4" loaf pan.

Cover pan with cling film and allow to proof until almost touching the cling film.

05 Remove the cling film.

Bake in a preheated oven at 190 C for 45 mins, cover the top with foil for the last 10 mins.

06 Remove from oven when cooked.

Remove bread from the loaf pan and leave to cool on a wire rack.

Notes

For White Bread, replace blue-pea extract with water.
