Servings : Enough for one double-layer 23 cm (9 inch) cake or 24 cupcakes
Ingredients
230 g (8 oz) cream cheese, room temperature
115 g (1 cup) icing sugar
630 ml (2 and 3/4 cup) heavy cream, cold
Method
01 Place the cream cheese and icing sugar into your mixer bowl. Using the whisk attachment, beat on medium speed until smooth and fluffy.
02 Pour the required heavy cream into a jug. Turn the mixer down to low speed.
Very slowly pour the heavy cream in a thin stream down the side of the mixer bowl. Scrape down the sides of the bowl of the mixer as it is beating.
03 When all the cream has been added, turn up the mixer speed to medium high. Beat until soft peaks, about 5 - 6 mins.
04 Turn off the mixer and use right away or store in a covered container in the refrigerator for up to 3 days.
Notes
Keep any leftovers refrigerated. You can make this up to a day ahead.
To make a chocolate version:
Add 25 g (1/4 cup) unsweetened cocoa powder when you are beating the cream cheese and icing sugar.
To make vanilla flavor:
Fold in 1 tsp vanilla extract at the final step, just before using.
