Pandan Pau

Have some Pandan Pau for breakfast...it's our JAM RECIPE of the day.

Ingredients

  • 600g pau flour

  • 1/2 tsp baking powder

  • 90g sugar

  • 1 tsp salt

  • 2 tsp instant yeast

  • 40g vegetable oil

  • 12 pandan leaves, process with 8 tbsp water and extracted using a muslin cloth

  • 300ml milk

  • Some chilled kaya for the filling; 2 - 3 tsps per pau

Method

01 Place sugar, salt, oil, milk, flour, baking powder and yeast in the breadmaker. Use dough setting to knead and prove the dough for 1 hr.

02 If breadmaker is not available, combine all ingredients and knead to form a smooth dough (at least 20 mins) and then let it rise for 1 hr or double in size.

03 When the dough is ready, divide into 30 portions and allow the dough to rest for 5-10 mins. Meanwhile, set water to boil in a steamer.

04 Flatten the dough pieces with your hands, and fill with 2 - 3 tsps kaya filling in the center. Pinch up the sides of the dough to completely enclose the filling.

05 Place each pau on a small piece of baking paper with its seam sides down. Rest the pau for 10mins until they look puffy.

06 Steam the paus with medium heat for about 10-15 mins until done.
