Purple Sweet Potato Paste/Filling

This is the RECIPE for Homemade Purple Sweet Potato Paste. You can easily cook it at home without added preservatives or additives. This homemade paste is suitable as a filling for buns/baos/mooncakes.

Yields : About 370 g of paste


Ingredients

  • 300 g (10.5 oz/2 cup) purple sweet potato; peeled, sliced and steamed for 20 mins then mashed till fine

  • 36 g (8 1/2 tsp) brown sugar

  • 30 g (2 tbsp + 1 tsp) unsalted butter/vegetable oil

  • 15 g (1 tbsp) maltose or honey


Method

01 Place all the ingredients into a bowl. Use a handheld blender or a food processor and blitz until you get a smooth mixture.
02 Pass the mixture through a sieve if you want a smoother paste. (optional)

03 Store the finished paste in an airtight container. Press a piece of plastic wrap on top to prevent condensation.

04 Chill for at least 1 hour before using.


Notes

Can keep for up to 7 days in the fridge.
