Coffee Cookies

Yields : about 40 cookies


Ingredients

  • 227g unsalted butter, softened

  • 130g castor sugar

  • 1/4 tsp salt

  • 2 large egg yolks, room temperature

  • 1 tsp vanilla essence/coffee essence

  • 280g plain flour

  • 15g instant coffee powder of your choice


Method

01 Preheat oven to 180C.

02 In a bowl of a stand mixer attached with paddle attachment, cream butter, sugar and salt together at high speed until pale and creamy. Scrape down the sides one or two times.

03 Add in egg yolks and vanilla/coffee essence.
Reduce the speed to low and add in flour and coffee powder. Mix until combined.

04 Transfer the cookie mixture into a piping bag with your favorite nozzle. Pipe your desired shapes (I used a star nozzle) onto a baking pan lined with parchment paper. Refrigerate for 30mins before baking.

05 Bake at 180C for 12 - 15 mins. Cookie is done when the edges and bottom are slightly brown.
Let cool on the baking pan for 5mins before transferring to a wire rack to cool completely.

06 Store in an airtight container. Should keep for up to 3 weeks.


Notes

Adjust baking time according to your oven. Cookies are done when the edges are slightly brown.
