Banana Mayonnaise Loaf Cake

Ingredients
1 large egg
200 g (1 cup) brown sugar
3 large or 6 small bananas, peeled and mashed (about 250 g/ 1 cup)
115 g (half cup) mayonnaise
1 tsp vanilla essence
220 g (1 and half cup) self raising flour
1/2 tsp salt
Method
01 Preheat the oven to 180 C/350 F. Line or grease a loaf pan.
02 In a large bowl, whisk the egg with the sugar until creamy..
Add the mashed bananas, mayonnaise and vanilla essence. Whisk until well-combined.
Set aside.
03 In a separate bowl,. sift the flour and salt together.
Using a spatula, fold in the banana mixture in. Stir until well combined.
Pour the batter into the loaf pan. Smooth the top with the spatula.
04 Bake in the preheated oven at 180 C/350 F for 50 mins or until a skewer inserted in the middle comes out clean.
Allow to cool on a wire rack for 15 mins then unmould.
Let cool completely before slicing to serve.
Notes
For the eggless version, the egg is omitted and the mayonnaise replaced with 165 g (half cup + 2 1/2 tbsp) vegetarian mayonnaise.
This cake will keep for up to 3 days at room temperature, up to 1 week in the chiller and 1 month in the freezer. Thaw in the chiller overnight before consumption if frozen.
